This is my dinner and I thought I would share it because I am particularly pleased with this one. I eat a lot of salads and, though I do love lettuce, sometimes I like to make them purely "goodies", you know, the stuff you dig for when you're serving yourself.
In this incarnation I used:
- red pepper
- green pepper
- avocado
- dill pickles
- artichoke hearts
- feta cheese
And dressed it with some of the oil from the artichokes, balsamic vinegar, fresh ground pepper, and sea salt.
Delicious.
